Japanese knives: steel, hardness and care
Japanese knives use harder steel and thinner edges than most Western knives, so they cut more cleanly and stay sharp longer. Stainless and powder steels are easy to live with; carbon steels take the keenest edge but need drying and oiling. Use them on wood or rubber boards, never on glass, stone or steel.

Does it rust?

It is the Rockwell hardness of the blade. Around 60 to 63 HRC is typical of Japanese knives: hard steel holds a very sharp edge longer but is less forgiving, so avoid twisting cuts, bones and frozen food.

Both: a 50:50 double bevel is sharpened equally on both sides.

How should it be sharpened?
On Japanese whetstones: a medium grit (around 1000) to sharpen and a fine grit (3000 to 6000) to polish, holding the maker's angle. Hone gently on a ceramic rod between sharpenings; avoid pull-through sharpeners.

Can it go in the dishwasher?
No. Dishwasher heat, detergent and knocks damage the edge and the handle; hand-wash and dry it.
