Common questions
J-cloths and wiping cloths
Colour-coded cloths stop cross-contamination: a common scheme is red for washrooms, blue for general areas, green for food areas and yellow for basins.
Disposable or semi-disposable?
Disposable cloths are used once or for a single task; semi-disposable cloths are rinsed and reused through a shift.
How many will we use?
It depends on the colour scheme and number of stations; most kitchens open a fresh cloth per task or per hour.
