Gastronorm is the international standard for kitchen container sizes. Depth is quoted separately, which is why the same fraction comes in several heights.

Which depth is most useful?
100 mm is the general-purpose choice. 65 mm suits flat-laid product, 150 and 200 mm suit bulk and liquids.

How many GN 1/2 pans fit a full-size space?
Two, since the half-size is exactly half the GN 1/1 footprint.

Does a deeper pan need a different lid?
No. Lids fit the fraction, not the depth, so one GN 1/2 lid fits all four depths.

Can they be stacked when full?
