Common questions

Polycarbonate or polypropylene pans?
Clear polycarbonate shows contents at a glance and handles cold storage and chilled display down to freezer temperatures. White polypropylene is more resistant to acids and oils and is often preferred for storing acidic foods. Neither standard grade is for ovens or hot holding; use stainless or high-heat pans for that.

How does gastronorm sizing work?
GN 1/1 is 530 x 325 mm, the standard that ovens, bain-maries, chillers and trolleys are built around. Fractions divide it: two 1/2s, three 1/3s, four 1/4s, six 1/6s or nine 1/9s fill one 1/1 opening, and GN 2/1 is double width for large combi ovens. Depth is listed separately, so the same fraction comes in several depths. Mix fractions freely within one opening.

Which pan size?
Confirm the GN size when ordering.

Why a lid?
Protection and stacking.

Is it for hot pans?
No, cold use.

Is it dishwasher safe?
Generally yes.
