Common questions
Kitchen knives
Use each knife for its job: a chef's knife for most prep, a paring knife for small work, a serrated knife for bread and tomatoes, a cleaver for bones. Hand-wash and dry knives, and keep them sharp; a blunt knife is the one that slips.
How should it be looked after?
Hand-wash and dry it straight after use, store it in a block or on a magnetic strip, and keep the edge up with a honing steel.
How is it cleaned?
Warm soapy water, or the dishwasher where the maker allows it; avoid abrasive pads, which scratch plastic.
How is it sharpened?
Hone it often with a steel, and sharpen on a whetstone or by a professional when honing no longer restores the edge.
Can it go in the dishwasher?
Hand-washing is best; dishwasher heat and knocks dull the edge and loosen handles.
