Rolled fondant covers cakes with a smooth finish; gum paste (flower paste) rolls thinner and dries harder for sugar flowers and figures. Humidity is the enemy in the UAE: keep paste sealed and work in air conditioning.
How is it rolled?
Knead until pliable, dust the surface with cornflour or icing sugar and roll to 3 to 5 mm for covering, thinner for flowers.
How should it be stored?
Wrapped airtight at room temperature; do not refrigerate, which makes it sweat.
