Smooth, ribbed or chrome griddle plate?
Smooth steel suits eggs, pancakes and burgers where full contact matters. Ribbed sections give bar marks and let fat drain from meat. Chrome radiates less heat into the kitchen, reduces flavour carry-over and cleans faster, but it scratches if metal tools are used carelessly. Many kitchens choose a split plate to cover both jobs.
