Common questions

Cutting and serving boards
Colour-coded cutting boards stop raw meat, fish, vegetables and bread sharing a board, which inspectors expect in commercial kitchens. Wooden and slate boards double as serving boards for cheese, bread and grills.

Why colour-coded boards?
Separate boards for raw meat, fish, vegetables, dairy and bread stop cross-contamination, which UAE food inspectors check.

How is it cleaned?
Hand-wash with mild detergent and dry it; oil slate now and then to keep its colour, and keep acidic cleaners off marble.

When should it be replaced?
When deep cuts hold dirt or it warps; scored boards harbour bacteria.
