Common questions

Choosing bowls
Size bowls by what they serve: small bowls for sauces and dips, 12 to 16 cm for soups and desserts, larger bowls for salads, pasta and sharing. Porcelain suits fine dining and hotels; melamine suits buffets and outdoor areas; glass shows off salads and desserts.

What is it used for?
Sauces, dips, olives and condiments.

Can melamine go in the microwave?
No. Melamine is not for the microwave or oven. It is light, shatter-resistant and dishwasher-safe, which is why buffets, poolside service, room service and outdoor dining use it.

How should they be stored?
Stack like with like at a manageable height and use racks in the dishwasher, so rims do not chip.

How many should a restaurant stock?
A common rule is about three per cover: one on the table, one in the wash and one ready for service, plus spares for breakage.
