Common questions

Cutting and serving boards
Colour-coded cutting boards stop raw meat, fish, vegetables and bread sharing a board, which inspectors expect in commercial kitchens. Wooden and slate boards double as serving boards for cheese, bread and grills.

Why colour-coded boards?
Separate boards for raw meat, fish, vegetables, dairy and bread stop cross-contamination, which UAE food inspectors check.

How is wood cared for?
Hand-wash, dry it straight away and rub in food-safe oil now and then; do not soak it or put it in the dishwasher.

How is it cleaned?
Scrub with hot soapy water and dry upright; plastic boards can go in the dishwasher, wooden boards should not.

When should it be replaced?
When deep cuts hold dirt or it warps; scored boards harbour bacteria.
