How does gastronorm sizing work?
GN 1/1 is 530 x 325 mm, the standard that ovens, bain-maries, chillers and trolleys are built around. Fractions divide it: two 1/2s, three 1/3s, four 1/4s, six 1/6s or nine 1/9s fill one 1/1 opening. Depth is quoted separately, which is why the same fraction comes in 20, 40, 65, 100 and 150 mm. Mix fractions freely within one opening.
