Common questions
Commercial cookware
Heavy bases spread heat evenly and resist warping; stainless steel is the workhorse, non-stick suits eggs and delicate fish, cast iron holds heat for searing. Induction hobs need a magnetic base.
Does it work on induction?
Induction needs a magnetic base; check the maker's markings or test with a magnet before use.
Why silicone?
It is heat-resistant, flexible and will not scratch non-stick surfaces; keep it away from open flame and check the maker's temperature rating.
How is it cleaned?
Let it cool, then wash with a soft sponge; non-stick pans should be hand-washed without abrasive pads.
Is it oven-safe?
Check the handles: plastic and wooden handles are not for the oven.
